One of my favorite things about fall is pumpkins. I love pumpkin pie and of course a good PSL. With Thanksgiving tomorrow (crazy!), I wanted to think of something festive I could make for dessert. All of these are a possibility! Since I can always count on pumpkin pie, I think I will lean towards the Homemade Pumpkin Spice Latte. Yum yum! What are some of your favorite fall treats?

No Tricks, Just Treats…
Halloween is one of my favorite holidays.
Costumes, Candy & Pumpkins?! What's not to love.
My parents decided to host a party this weekend and asked my husband and I to help out.
I was excited considering I love any excuse to dress up and eat candy.
However, is it was a party for my 13 year old brother and all his friends.
YIKES!
So here we are spending our night with 30 sixth and seventh graders.
Oh to be so cool like us, right?
Ha.
It actually turned out to be pretty fun.

Easy-Cheesy Tacos
Like I've mentioned before, I really want to be a "Betty Homemaker" but let's face it...I am seriously cooking challenged! I go to the easy, basic stuff, then try to add my own spin on it to make it a little more "homemade". So here's my take on basic beef tacos.
Austin was a big fan of these bad boys. Maybe he was just being nice?..you be the judge...

Oopsies...forgot to include the main ingredient here...cheese!
But here they are listed:
1/2 Onion
1lb Ground Beef or Turkey
1 bag Frontera Taco Skillet Sauce
Mixed Fiesta Cheese
Cilantro & tomato {for toppings}
Black Beans
Chips & Salsa (because it wouldn't be complete with out it)
1. Chop 1/2 the onion and put it in the skillet to brown.
2. Add meet to your skillet.
By this time your house should be smellin' all kinds of delicious. Once your meet is browned go ahead and add the Texas Taco Skillet Sauce {Market Street had a few different flavors...I decided this might be the safest to experiment with first}

i love how a good meal is only one pin away...a pinterest pin that is. i found this little recipe while perusing through pinterest and knew I had to make it. however, I {try} to make things *skinny* if possible. so I made some modifications. here it is. this is SO easy. enjoy!
Skinny White Chicken Enchiladas10 soft taco shells {low carb & 50calories}2 cups cooked, shredded chicken2 cups shredded skim/fat free Monterey Jack cheese 3 Tbsp. butter3 Tbsp. flour2 cups low sodium chicken broth 1 cup plain greek yogurt 1 (4 oz) can diced green chillies
1. Preheat oven to 350 degrees. Grease a 9x13 pan2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. 4. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled yogurt.5. Pour over enchiladas and top with remaining cheese.6. Bake 22 min and then under high broil for 3 min to brown the cheese.
