So a few weeks ago the husband and I booked our first trip to Las Vegas. Weare pumped Not that we are big gamblers or anything, but there is something about the lights of the city that just has me fascinated. With Vegas on the brain... I can't help but think of traveling essentials.Here is what's inspiring me lately...Enjoy!
1. My Canon Rebel is a must. Especially with all there is to see in LV...can't leave home without this.
2. . Wow, I LOVE these. Perfect size for carry on...and they are great to use as way to freshen up after a long day of traveling.
3. Mud Pie make up bag. This bag is perfect for flights because it has a clear pouch {TSA approved} that snaps off. I love it! Thanks to a student of mine I will be toting my makeup in style.
4. Apple iPad. Is there really anything that needs to be said? Amazing. Let's just say Vegas Vacation will be downloaded for our viewing pleasure as we board the aircraft.

After working in a salon for the past 7 years {summer job aside from teaching} and being a product junkie, I have literally tried hundreds of different beauty products. here’s the skinny
i love how a good meal is only one pin away...a pinterest pin that is. i found this little recipe while perusing through pinterest and knew I had to make it. however, I {try} to make things *skinny* if possible. so I made some modifications. here it is. this is SO easy. enjoy!
Skinny White Chicken Enchiladas10 soft taco shells {low carb & 50calories}2 cups cooked, shredded chicken2 cups shredded skim/fat free Monterey Jack cheese 3 Tbsp. butter3 Tbsp. flour2 cups low sodium chicken broth 1 cup plain greek yogurt 1 (4 oz) can diced green chillies
1. Preheat oven to 350 degrees. Grease a 9x13 pan2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. 4. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled yogurt.5. Pour over enchiladas and top with remaining cheese.6. Bake 22 min and then under high broil for 3 min to brown the cheese.

When it comes to weekend getaways, I never pass one up! I love the feel of a vacation, while knowing I will be home in a couple of days. This past weekend the Mr. and I traveled to Memphis with his family to attend his cousins wedding. What a wonderful weekend we had.
